Green Glowing Sweet Pea Dip to Make this Weekend

In honor of Memorial Day, I wanted to share with everyone a recipe that is both mind-blowingly delicious and super nutritious. Whether you are staying at home and enjoying a stress free and quiet weekend, traveling to the beach or headed to a more exotic destination, it’s always helpful to have a healthy dip recipe in your back pocket. This is certainly a way to impress your friends, guests, and is sure to make you happy (and keep you glowing!) all summer long. After the success of my raw coconut and cocao Amazeballs and my Neon Green Avocado and Spinach Dip a few weeks ago, I knew it was time to deliver another recipe that promotes a glow from within.

I spoke with New York City based health Coach Lauren Unger who gave me this sweet pea dip recipe as a great summer go-to. We made it together before a party I was throwing. Everyone, my male guests included, was obsessed with the taste and texture, and I was so surprised by how easy it was to make. It’s also an insanely healthy snack, as the nutritional benefits of peas are endless. Filled with anti-aging and anti-inflammatory properties, these little guys pack a big punch when it comes to your health. Peas are good for your eyes, high in fiber and essential vitamins and nutrients, support digestive health and are energizing to boot.

I decided to serve them with Asparagus for a double dose of seasonal health. With high levels of folate and tryptophan, this vegetable produces serotonin in the brain that aids in stabilizing your mood. So big words made small, this food will improve your mood! They are also high in fiber, help with PMS and water retention, and are packed with Vitamin K, folate and antioxidants. They even help with hangovers.

In other words, you’ve got to try this dip now:

GREEN GLOWING SWEET PEA DIP WITH MINT AND BASIL (makes 4 servings)

½ cup onion, chopped

2 cups green peas

1 to 2 tablespoons of extra virgin olive oil

½ cup fresh basil leaves

½ cup mint leaves

1 teaspoon sea salt

Place a pan over medium-high heat. Add 1tbsp olive oil and sauté onion until fragrant for about 3 minutes. Next add peas to the pan and ¼ cup water to cover the peas. Cook until peas are bright green for approximately 2-3 minutes.

Remove from heat and strain if there is excess water. Place onion and peas in blender with basil, mint and sea salt. Blend until smooth. Give it a quick taste and adjust seasonings accordingly.
