Neon Avocado and Spinach Dip to Make Tonight

We all love guacamole in the summer, but why miss out on this nutrient powerhouse in the winter? I am obsessed with Mexican food, so avocado is naturally one of my favorite foods. It’s like almond butter – I can’t ever seem to get enough of it. After the success of my raw coconut and cocao Amazeballs a few weeks ago, I knew it was time to deliver another recipe that promotes a glow from within.

I spoke with New York City based health Coach Lauren Unger who gave me this avocado spinach dip as a great winter go-to. Packed with healthy fats and over 20 nutrients from the avocado alone, not to mention the fiber and multitude of vitamins from the spinach, this is one super food snack. Enjoy this as a dip or add it to a vegetable wrap for a boost of vitamin A and vitamin C, potassium, calcium, magnesium and even iron! It’s perfect for a mid-day snack or as a super simple way to impress your friends. Note: I am the worst cook, and even I find this VERY easy.

AVOCADO AND SPINACH DIP (Makes 2 servings)

2 cups raw spinach

2 avocados

½ cup onion, chopped

2 cloves organic garlic, crushed

1 teaspoon sea salt

2 limes, juiced

Cayenne pepper (optional)

MIX THE INGREDIENTS. Place all ingredients in blender and process until ingredients are mixed thoroughly so they are rich and creamy.
