Wondering what to make for breakfast tomorrow? Start your day beautifully with the mind-blowingly delicious and oh so easy to make smoothie bowl by Lauren Unger of Hint of Greens. I have been making smoothies for breakfast for sometime now. Not kidding, I make a smoothie every single day, except when I travel, of course. Over the past few years, I have experimented with all different kinds of fruits, vegetables and superfoods to try and mix things up as often as possible. I go for nutritious ingredients like goji berries and chia seeds for fast fiber and protein to ensure an energized start to my day. I believe that the key to a healthy life is to eat real, organic foods whenever possible. Smoothies are great because they allow me to blend all of these amazing ingredients together, making healthy, vibrantly colored creations that keep my body in good shape.

This is precisely why you have to try this amazing matcha smoothie bowl! Matcha gives you the alertness of caffeine without the jittery side effects that come with a cup of coffee. It also boosts your metabolism, while regulating your blood sugar. This means you won’t be reaching for chocolate around the 2pm slump. This bowl is also a great alternative to the typical drink-through-a-straw smoothie, because you get to enjoy it with a spoon, making it feel more substantial and filling. Enjoy!

Pineapple Spinach Matcha Bowl (makes 1 bowl)

Ingredients:

½ cup almond milk (or any non dairy milk)

1 banana, frozen

1 cup frozen pineapple

1 cup fresh or frozen spinach

1 tbsp matcha powder – I like this brand

1 tsp Moon Juice Beauty Dust

5 ice cubes (optional)

Toppings:

1 tbsp chia seeds

1 tbsp hemp seeds

1 tbsp shredded coconut

2 strawberries

Directions:

Place all smoothie ingredients in blender and blend until smooth. Pour smoothie into a bowl and top with chia and hemp seeds, coconut and sliced strawberries.

When it comes to bowls you can play with the toppings. Try goji berries, sliced bananas, flax powder, flax seeds, cocoa nibs and spirulina… The options are endless!

If you love this, you will DEF love Lauren’s Apple Cinnamon Chia Pudding and her Neon Green Avocado and Spinach Dip.
